Combine frozen cassava, water and 1 Tbsp of salt in large pot. Bring to boil on high heat, then reduce heat to medium, cover and boil for 25 minutes, or until tender. Drain cassava and cool for 15 minutes.
Cut cassava in half. With a pairing knife, remove the tough, stringlike fibre that runs the length of the cassava. Discard the fibre, then cut the cassava in pieces 3 to 4 inches long about ½ inch wide and ½ inch thick.
Line a baking tray with paper towels. Preheat a deep fryer to high heat or heat oil in a large heavy-bottomed pan on high heat for 5 minutes.
Drop a small size of cassava into the oil. It should immediately float to the top and sizzle. Place the fries in the pan and fry until golden. Sprinkle fries with Vij’s Naughty & Tangy Masala and Black Pepper Powder while they are still hot. Serve with a whole lotta love!
